The earth is a strange place. There are two living species of Amazonian trees, a largely unknown third species and a huge amount of other species that probably don’t exist on the planet. You’d be lucky to find a third species in the ocean. But what is the most unusual to scientists? That would be the existence of a completely unknown vegetable that is part of a well-known food chain.

No one is quite sure what the hell this is yet. They are still trying to discover the whole truth about it. But, they do know that Peru is the “breadbasket” of South America and that Peru has probably the finest chili in the world. Certainly this is Peru we’re talking about. The food is Peruvian, and the chili is mainly what remains after the native chickens have been rounded up and forgiven for being unruly.

The Chile Peppers are disturbing though, because they cause skin irritation and they keep humans away from the true healing power that would heal any physical or mental afflictions. Chili peppers are not bad for you, but they do have exceptions.

This small country is the number one producer of tomatoes in the world, and they now produce more tomatoes per capita than any other country. Chile also leads the way in the cultivation of potatoes and corn, and is getting more corn as the years go by.

The type of chili that is grown inuate mostly in the dry areas of the south of Peru, where corn is grown, and where there is plenty of sunlight to get the job done.well sort of explains how they survived without fire for so long.

Standing at the peak of the Andes mountain range which is the border between Peru and Chile, we have Chimay, one of the world’s highest chili peppers.

Chimay is considered a fruit of the plant Copra. This is not truly a pepper, but something that looks pretty similar. The fruit is usually used as a garnish or a shape for desserts. So far, the only people who have tried chimay are the Peruvians.

Corn tortillas are made from corn. They are thin and round, and they have been shaped by hand, not machine. They are used to roll and to torte.

Chimay is generally used as a dip for corn chips, or to wrap around corn nuts.

Did you know that there is no such thing as a “Chimichanga”? There is only a chimichanga recipe.

The history of chimichanga is traceable back to the 1800’s. The Peruvian Indians had a tradition where they used to make chimichanga. But the chimichanga came to the west with the European settlers.

Every Peruvian, when he wants to make a Chimichanga, has to think about the feast days of the year and the main ingredients.corn, onions, potatoes, tomatoes and chicken or beef. The rest is up to you. Chimichanga means “made with corn”.

Somata is the main ingredient. It is made with the meat of the deceased, roasted corn tortillas and beans. In fact, the dish is a very good way to preserve meat. The traditional process is a bit different from the usual ones used in the west. In fact, the dish as it is today is not necessarily the one that is traditionally prepared in Peru.

A lot of chimichanga recipes have risen from the influence of the different villages and towns. This dish is also one of the most known choices of the Spanish colonists in the Peru, as well as the early French settlers.

So far, the various versions of chimichanga are still different. Its original recipe was given to the king of Peru, Montezuma. And since then different recipes have risen up around the various regions of Peru.

You may not be able to find some exact recipes when you read the cookbooks. However, you can find general ideas and components. Peruvian food is great and will never get old or bad. It goes well with all kinds of sauces and tastes amazing.
