The writer, a dairy industry professional, stated “For the best beef ever assembled, it came from a cow that had know how to feed her calf” referring to the increasing amount of grass run-off, or manure, that is now commonly used in cattle feed lots. grass acreage has increased as a result of increasing demand for beef, which has increased farmers’ bottom line. This process has recruited new low income farmers who have little experience with cattle production to obtain it. At the same time it has fueled a new segment of the beef industry that includes: grass fed beef producers, U.S. feedlots, California graders, and marketers to send the word out. Right now it is just a handful of producers producing prime steaks on a professional, financial, and not necessarily a green label basis.
